Proper storage: In an airtight container in the refrigerator.
Shelf life: 1 week in refrigerator in airtight container. Slightly shorter at room temperature.
Freezing: They must be frozen/cooled down in order to settle. If you make them in advance, you can leave them in the freezer in between 1-2 months, you can then take them out when you need it, cut while they are still frozen and they are ready.
Thawing: They are cut immediately after they are taken out of the freeze/fridge, roll them in powdered sugar and place in fridge in airtight container.
How can you tell whether they are good or bad:
Mold, tastes bad, odd texture or excessive moisture. If you doubt, leave it out.
