Buttercream & Cupcakes

  • Shelf life on buttercream & cupcakes:
    Butter cream can be stored in the piping bag, airtight container or freezer bag in the fridge, as long as the expiration date was on the butter.
  • How can you see if buttercream & cupcakes are good or bad?
    If it smells or taste bad.
  • Proper storage of buttercream & cupcakes:
    Butter cream must either be used immediately,refrigerated or frozen. Cake with buttercream, require refrigeration and should be taken out in room temperature before serving. Defrost time depends on cake-size.
    If your buttercream have been refrigerated in a bag or container, take it out 1-1.5 hour before you need it.
  • Nice-to-know:
    Buttercream may occasionally separate slightly after thawing, but can be whipped up again at medium speed (in most cases). Chocolate buttercreams can be added melted chocolate (50 – 100 g) and that gets butter cream to regroup.
  • Can I make buttercream & cupcakes in advance and serve it later?
    YES! You can freeze butter cream in the piping bag, on the finished cupcake or in an airtight container. I would recommend NOT to freeze cupcake bottom down (cake sponges can be frozen if they are to be assembled with filling), as it may do a little harm in taste and texture. But it can be done without health consequences, so it is a matter of taste.
    If you want to finish the cake/cupcake in advance, and put them in the refrigerator until serving, the sponges can be made 2 days before(if they are stored at room temperature), 3 days before(if they are refrigerated). The buttercream can be piped on the cake before the butter in the buttercream expires. Remember, to take the cake/cupcake out in time for serving, so the buttercream is soft and delicious.
    Alm. cupcakes – 2 hours before serving.
    Mini cupcakes – 1 hour before serving.

  • Can buttercream & cupcakes be frozen?
    Yes! It can be frozen for up to 3 months(with the sponge). Defrost time on regular size cupcakes are 2-3 hours, on mini cupcakes the defrost time is 1-1.5 hour.
